Baked Spinach!

Have trouble getting the kiddos to eat their vegetables?  This is a surprisingly tasty recipe for spinach that my kids love!  My kids DO NOT eat spinach any other way, but this they LOVE!

Ingredients:

Spinach (large cooking leaves work best)

Olive oil spray

Sea salt

Parchment paper (optional)

Preheat oven to 375 degrees. Line baking sheets with parchment paper.  Spray paper lightly with olive oil.  Spread spinach on baking sheets in a thin layer.  Spinach can overlap as it will shrink when it bakes.  Spray spinach lightly with olive oil spray and then salt to taste.

Bake for about 15 minutes or until the spinach looks dry.

Tastes best when eaten right away.  I think it tastes a little like baked pumpkin seeds. My boys chow this stuff!  I hope you and your family enjoy it, too!
