31 Days of Homemade Holidays! Day 6 is Pumpkin Apple Pancakes!! Perfect for a cool fall morning!
1 3/4 cups milk
3/4 cup canned pumpkin
2 tsp vanilla
3 tsp pumpkin pie spice (or cinnamon)
2 Tbsp sugar
2 cups flour
4 tsp baking powder
1-2 cored, peeled and finely chopped apples
Beat eggs and milk together, then add pumpkin and vanilla. Stir flour, baking powder, sugar and pumpkin pie spice together, then add to wet ingredients. Mix well before folding in the chopped apples.
Pour about 1/2 cup of mixture into a medium heat frying pan or griddle. Cook until edges are dry and begin to bubble, then flip for another minute or so. Serve with maple syrup or whipped cream! Mmmm!
